小椒鸭舌

我是买的现成的卤菜店的鸭舌。

1。鸭舌加一把花椒在水中煮开,关火泡30分钟。冲冷水,沥干。这样可以去掉原来卤菜的怪味。

2。洋葱切粒,小朝天椒几个切碎,姜末,蒜末,干辣椒皮和花椒一把。

3。多油,下花椒和干辣椒皮,到香味出来,放入2的其他配料,翻炒,下鸭舌;加少量辣豆豉,白胡椒粉,少量糖起鲜味,盐,少量酱油,一小勺孜然粉。炒到鸭舌尝起来有麻辣的味道的时候撒入香菜末起锅 (鸭舌不容易入味,所以要翻炒一会)
